Jaime Caceres trained in Lausanne and has a wide & varied experience in some of the best hotels & restaurants on Mallorca.

He first worked with Marc Fosh several years ago, forming an essential part of the team that gained the Michelin star in a small hotel in Santa Maria. Jaime is now responsible for the service teams at Marc Fosh Restaurants.

In many ways simple food is far harder to cook, José Manuel Bellido makes it look easy. Born in Malaga, José came to work for Marc Fosh after serving a five-year apprenticeship in some of Barcelona’s most emblematic restaurants. Together with Marc, Jose has discovered his own modern style of cooking, heavily influenced by the light, creative cuisine of the Mediterranean with classical French touches.
